excellent quality produce. And the wild salmon is just extraordinary!
Among the restaurants in Washington that utilize and appreciate local farms
and embrace seasonal eating, among the best in the greater Seattle area
are Rover's in
the Madison Park section, The Corson Building in Georgetown, Trellis in
Kirkland, and The Herbfarm in nearby Woodinville. And then there's
Tilth, whose chef, Maria Hines, is the 2009 James Beard Award winner for
