Maurice Graham Henry on the best farm-to-table restaurants in
Oregon
Oregon
is blessed with much exceptional farmland--and is fortunate to be home to several
farm-to-table restaurants utilizing local and regional-area foods that often
are naturally-raised and organic. The state is home to the Willamette Valley, one of the finest wine growing regions in the Western
Hemisphere. In the heart of Oregon wine country is Jory, the signature restaurant of The Allison Inn and Spa,
where a new chef, Stephen Marshall, presides over the kitchen and continues to source produce from its own
garden as well as local area farms. In Portland, our initial selection is
Paley's Place, where the focus is on exceptional cooking utilizing
ingredients that
incorporate local, organic and sustainable practices. Expect to see
additional Oregon restaurants listed in our Guide going forward.
