At Bolete we believe the integrity of our ingredients defines our food. Chef Chizmar changes both the dining room and tavern menus daily to reflect what we have in fresh from our carefully selected farmers and purveyors, bringing you the best of what is available. The food is prepared entirely in house. There are no short cuts. We make all our own stocks, sauces, pastas, butcher and smoke our own fish and meats. We couldn't make all this food that you love if it weren't for the local farmers that support our mission. They work incredibly hard to perpetuate the philosophy of Slow Food and are committed to providing restaurants, diners and their communities with the option to eat and live better. For this we are eternally grateful.
